Cody Holubeck

New York Agricultural Stewardship Associate

Cody is based in Cooperstown, NY. His path into agriculture didn’t begin in a field, it began in a kitchen. Working long hours in professional kitchens, Cody came to understand food not just as sustenance, but as culture, memory, and connection. Over time, curiosity about where ingredients came from and who grew them — pulled him out of the kitchen and into the field. Originally from California, Cody has lived and worked across agricultural landscapes on both the West and East Coasts, learning firsthand how soil, climate, and community shape the food on our plates. His journey carried him north to Oregon and Washington, where he experienced diverse farms and began to understand agriculture as both craft and responsibility. Time spent in New Hampshire deepened his appreciation for working lands shaped by history and community, and in both the northern forests and southern farmland of Minnesota. He witnessed the resilience required to grow food in challenging climates. Each place left its mark, sharpening his belief that soil is more than dirt; it is memory, labor, and possibility.


Cody went on to earn his B.S. in Crop and Soil Science, grounding his lived experience in scientific understanding.Today, his role with AFT centers on soil health, regenerative agriculture,and food sovereignty. He believes stewardship begins beneath our feet, and that strong farms depend on healthy soil, practical solutions, and respect for the people who work the land. In his role with AFT,he works collaboratively with farmers and partners across Southeast NY to advance stewardship approaches that strengthen both working lands and rural communities. Outside of his professional work, Cody enjoys skiing, hiking, and fishing — activities that reflect his love for the outdoors and inform his lifelong commitment to caring for natural landscapes.
