Ms. L’Asia George (she/her) is a Nutritionist/Extension Associate and she is also a Food Safety Instructor, Produce Safety Alliance Trainer, and previously held the position as a Research Associate at Southern University Agriculture Research and Extension Center. She has wide experience in nutrition assessment, analysis, consulting, and product development that assist with weight management.
During her time as a Research Associate, she was the Co-Author and Co-Director/ Senior Nutritionist for the Evans Allen Research Project “Investigating the Effect of Retirement Financial Planning on Changes in Nutrient Intake: A Quest for Enhancing Louisiana Young Seniors’ Wellness”. She also, was the Project Coordinator and Nutritionist for the USDA Funded Research Study “University Freshmen Moving towards Becoming Community Health Ambassadors” for three years. During that time, she developed a breakfast health bar highly concentrated in Whey Protein Isolate and Resistant Starch for the purpose of weight loss along with several nutritional curriculums. She has also worked with the USDA MyPlate SuperTracker and Esha Food Processor software to analyze the Macro and Micronutrients in the participant’s food intake.
Ms. George conducted an independent study “Eating Healthy on the Go” targeting toddlers and the elderly in which; she developed a chocolate pudding that was high in fiber, protein, and reduce sugar. She presented her results at The Association of 1890 Research Directors 2019 Symposium. She has conducted over 100 Food Safety Courses within the last two years across the state of Louisiana, and she also has assisted the Louisiana Department of Agriculture and Forestry with certifying small farmers in Produce Safety.
